Turkish Coffee & Italian Coffee IV
The preparation of Turkish coffee and Italian coffee (espresso) is totally different and for this reason the taste and organoleptic properties of these coffees are different. Turkish coffee can be found finely grinded in its package. First of all, this coffee is put into the coffeepot that is called in Turkish “cezve”. Then it is cooked with sugar and water. The major parameter that defines quality of the Turkish coffee is its foam. The foam occurs during the cooking of the coffee. When it is put to the particular glass called in Turkish “fincan” there should be foam on it. The sugar content can be changeable according to the consumer's appetite.
Preparing Italian coffee is more complicated whereas the Turkish coffee just can be prepared with cooking all the ingredients together. The Italian coffee can be prepared in bar or caffetteria with an espresso machine. Caffè espresso or simply espresso is a concentrated beverage brewed by forcing a small amount of nearly boiling water under pressure through finely ground coffee. On the other hand you can prepare your own espresso at your own kitchen if you have mokona.
COFFEE with no caffeine
I want to make a summary in order to explain briefly. Our raw material is coffee beans for the processing. The coffee beans should be cleaned well. The produces must select the best quality for the raw material in order to obtain good final product quality. This rule is valid for every kind of food products. After these process, decaffeination process can be realized optionally . The aim of this step is decreasing the caffeine amount in the coffee beans with using SC-CO2 (Supercritical CO2). When the pressure and temperature of the CO2 is adjusted intentionally, it can be super critical fluid in specific phase and its solvent power is relatively high. So caffeine can be extracted by SC-CO2. After this process, roasting will be done.
